Salad inspiration! I had berries and some leftover homemade chicken nuggets. (I make a huge batch of these and they are great for salads and quick kids meals!) I used a base of arugula and baby spinach, added the berries, toasted pine nuts, chicken, and topped it with a lemon poppyseed dressing. So good and gluten-free and dairy-free!
